Blackened cajun fish sandwiches
Blackened cajun fish sandwiches with pickle slaw
Ingredients
For the fish
- 4 white fish fillets (haddock, cod or basa)
- 1 tbsp Cajun or Old Bay seasoning
- 1 tsp smoked paprika
- 1 tbsp olive oil
- salt & pepper
- 4 brioche buns
- 2 gherkins finely chopped
- 2 tbsp mayo
- 1 tbsp gherkin juice
- 1 tsp dijon mustard
- lettuce
- hot sauce or tartare sauce
For the pickle slaw
- 1/4 red cabbage finely shredded
To serve
- sliced tomato

Preheat the grill to 200°C medium heat.

Prep the slaw- mix everything in a bowl and chill in the fridge until ready to serve.

Season the fish: Mix the seasoning with paprike, additional salt. Rub the fish with oil to use as a binder and coat both sides with seasoning.

Preheat the BBQ flat plate, plancha or large cast iron pan until hot. Use oil on the cooking surface to prevent sticking. Cook fish fillets for 2–3 mins per side until blackened and flaky.

Split the buns and toast them face-down on the grill for 30 seconds.

Assemble the Sandwiches with lettuce, tomato, fish, slaw, sauce. Serve hot with sliced tomato and lettuce and maybe some hot sauce for extra kick.
