Greek-Style Pork Souvlaki with Tzatziki
Ingredients
For the Pork Souvlaki
- 600g pork shoulder or leg cut into 2-3 cm cubes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 3 cloves garlic minced
- 2 tsp dried oregano
- 1 tsp smoked paprika
- Salt & black pepper
- Wooden skewers soaked in water for 30 mins
- 1/2 cucumber grated and drained
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt & pepper
- Optional: Fresh dill
- Cherry tomatoes halved
- Red onion slices
- Lemon wedges
For the Tzatziki
- 200g Greek yogurt
To Serve
- Flatbreads or pita
Directions

Marinate the Pork: Cobine olive oil, lemo, garlic, oregano, paprika, salt & pepper. Toss pork cubes in marinade. Cover and chill for at least 1 hour, ideally 2-3 hours.

Prepare the Skewers: Thread pork onto soaked skewers. Leave a little space between cubes for even cooking.

Preheat the Professional PRO: Heat on medium-high direct heat. This grill is perfect: its even grill grates give perfect sear marks and allow quick cooking without drying the meat.

Grill the Souvlaki: Cook skewers 3-4 mins per side, turning to get all sides browned and slightly charred. Meat should reach internal temperature 70°C and remain juicy.

Make the Tzatziki: Mix yogurt, grated cucumber, garlic, olive oil, lemon, dill, salt & pepper. CHill until serving.
6.
Serve: Place skewers on a platter. Serve with flatbreads, tzatziki, cherry tomatoes, onion, and lemon wedges. Optional: drizzle extra olive oil over skewers.
