Grilled Chicken Kiev with Herby New Potatoes

Ingredients

  • 2 large chicken breasts
  • 50 g butter softened
  • 2 galic cloves minced
  • Handful of fresh parsley finely chopped
  • Zest of 1/2 lemon
  • Salt & pepper
  • 1 egg beaten
  • 50 g plain flour
  • 100 g panko breadcrumbs
  • 500 g baby new potatoes
  • 2 tbsp olive oil
  • 1 tbsp coarse seat salt
  • Fresh thyme or rosemary

Directions

Step 1 of 8
1
Mix butter with garlic, parsley, lemon zest and refrigerate until it has began to harden but not fully solid.
2
Cut a pocket into the side of each chicken breast. Stuff with garlic butter, then place into the fridge chill again to firm up.
3
Build a dredging station with three bowls of flour, egg and breadcrumbs. Dust each chicken breast all over in flour, then dip in the egg, then coat in the breadcrumbs.
4
Boil new potatoes for 10 mins, then toss in oil, salt, and herbs.
5
Preheat the gas grill to 200°C and set up for two zone cooking.
6
Grill chicken indirectly with the lid closed until golden and cooked through (20–25 mins).
7
Grill potatoes over medium flame until crispy and charred. Optionally smash the potatoes with a grill press to create a crispy exterior.
8
Serve with lemon wedges and salad.
