Grilled halloumi & meatball skewers
Grilled halloumi & meatball skewers with harissa drizzle + charred veg
Why it’s banging:
Golden halloumi + juicy meatballs on skewers = party. Throw some peppers, onions and courgette (or swap as needed) on the grill too and you’ve got a full plate, minimal clean-up, and big gas BBQ energy without the drama.
Ingredients
For the skewers
- 1 block halloumi cut into chunks
- 12 small meatballs (homemade or good-quality shop-bought)
- olive oil
- salt & pepper
- 1 egg
- 30g breadcrumbs
- 1 garlic clove minced
- 1 tsp oregano
- salt & pepper
- 1 red onion cut into wedges
- optional: courgette, cherry tomatoes, or aubergine
- olive oil
- salt
- lemon juice
- 1 tbsp real ranch seasoning
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- juice of ½ lemon
- pinch of smoked paprika
Optional homemade meatball mix
- 500g pork or beef mince
For the grilled veg (do on a tray or skewers)
- 2 bell peppers chopped
Harissa drizzle
- 1 tbsp harissa paste

Preheat your BBQ: Medium heat across the whole grill (200–220°C), lid down.

Form meatballs if homemade: Mix ingredients, roll into 3cm balls, chill for 15 mins to firm.

Build the skewers:Thread halloumi and meatballs alternately onto skewers. Brush with oil and season.

Grill: place meatball skewers on the grill, turning regularly — around 10–12 mins until meatballs are cooked and halloumi is golden. Preheat a large cast iron pan ready for the vegetables. Chop and prepare all of the vegetables and season with the oil, honey, lemon and ranch seasoning. Place the vegetables in the cast iron pan and sizzle, turning occasionally for 8–10 mins, until softened and charred.

Make the drizzle: stir harissa, oil, lemon, honey, and paprika in a bowl. Taste and tweak.

Serve it up: plate your meatball & halloumi skewers over the grilled veg. Drizzle generously with harissa sauce and hit with fresh herbs or feta if you’re feeling it.
Hot Tip
serve theirs deconstructed: meatballs & halloumi chunks on a plate, grilled peppers optional, drizzle on the side or sub in ketchup or BBQ sauce.
