Mushroom Stroganoff on Toast
Ingredients
- 400 g mixed mushrooms (chestnut, portobello, oyster)
- 1 tbsp oil
- 1 tbsp butter
- 1 small onion sliced
- 1 garlic clove minced
- 1 tsp smoked paprika
- 100 ml sour cream
- 1 tsp Dijon mustard
- Salt & pepper
- Thick slices of sourdough
- Fresh parsley to garnish

Preheat the gas grill to 200°C.

Chop the mushrooms into even sized slices.

Preheat a cast iron pan on the BBQ. Add oil, butter, onion and mushrooms. Cook until browned and softened.

Add the garlic and paprika. Cook 1 more minute.

Stir in sour cream, mustard, salt and pepper. Simmer gently.

Cut the sour dough loaf into doorstops.

Grill sourdough over grill grates if possible until crispy with grill marks.

Spread a thick layer of butter.

Spoon stroganoff over toast, garnish with parsley and serve.
