Bacon Smash Pancakes With Peanut Butter Bananas
Bacon Smash Pancakes with Peanut Butter Bananas
A sweet, saltz summer flat-grill classic
Ingredients
Pancakes
- 250g plain flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 pinch salt
- 2 eggs
- 300ml milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 3 tbsp peanut butter
- 2 tbsp brown sugar
- 1 tbsp butter
- Chopped peanuts (optional)
- Icing sugar
Smash Bacon
- 8 rashers streaky bacon
Peanut Butter Bananas
- 3 bananas sliced lengthways
To Serve
- Maple syrup
Directions
1.
Heat the Grill: Preheat the Grill to medium heat. The large flat surface lets zou cook bacon, pancakes and bananas all at the same time, making this a perfect brunch recipe.
2.
Cook the Bacon: Lay the streaky bacon on the grill and cook until crispy and golden. Once cooked, chop roughly into pieces and set aside. Leave a little of that bacon fat on the grill - it's flavour gold.
3.
Make the Pancake Batter: In a bowl whisk together: flour, sugar, baking powder, baking soda, salt. Add eggs, milk, butter and vanilla and whisk until smooth.
4.
Bacon Smash Pancakes: Pour small rounds of pancake batter directly onto the grill. Before they set, sprinkle crispy bacon pieces onto each pancake. Using a spatula, gently press the bacon into the pancake - this is the bacon smash. Cook 1-2 minutes per side until golden.
5.
Peanut Butter Bananas: On another section of the grill: Melt butter, add banana slices, sprinkle with brown sugar. Allow the bananas to caramelise and soften. Add spoonfuls of peanut butter and let it melt over the bananas. The result is a sticky, caramelised peanut butter banana topping.
6.
Serve: Stack the bacon smash pancakes and top with: peanut butter bananas, maple syrup, chopped peanuts, a dusting of icing sugar. Sweet, salty and completely irresistible.
