Ingredients

For the sausage

  • 1 giant spiral pork sausage (ask your butcher or coil a long sausage)
  • 1 tbsp vegetable oil
  • 2 tbsp brown sugar
  • 1 tbsp wholegrain mustard
  • 1 tbsp honey
  • 1 tsp apple cider vinegar
  • 1/2 tsp black pepper
  • Malt vinegar
  • English mustard
  • Pickled onions
  • Optional: buttered bread rolls

Beer Glaze

  • 200ml British ale or lager

To Serve

  • Proper chunky chips

Prepare the BBQ: Set up a two-zone fire on your gas BBQ with a temperature of 200°C. Using the grill to: Indirect side to cook the sausage through and direct side to caramelise the glaze.

Secure the Spiral: Lay the sausage spiral flat. Push 3 metal skewers through the spiral to hols its shape. Brush lightly with oil.

Cook the Sausage: Place the spiral on the indirect heat side. Cook for 20-25 minutes, turning occasionally. This gently cooks the sausage without splitting the casing.

Make the Beer Glaze: Place a small pan or foil tray on the BBQ. Add beer, brown sugar, mustard, honey, vinegar and pepper. Simmer for 5-8 minutes until syrupy.

Glaze and Finish: Move the sausage to direct heat. Brush with glaze and turn every 1-2 minutes. Kepp glazing und sticky and caramelised. Cook until the internal temperature reaches 70°C.

Rest and Slice: Rest the sausage 5 minutes. Remove skewers. Slice like a pizza into wedges.
7.
Serve: Pile the wedges onto a board with hot chips, malt vinegar, mustard and pickles. A proper British BBQ feast.
