Venison & Blue Cheese Bangers with Red Onion Jam
Ingredients
For hot dog
- 4 venison sausages (or good quality game sausages)
- 4 brioche hot dog buns
- 100 g blue cheese (stilton or gorgonzola) crumbled
- Handful of rocket or watercress
- Olive oil
- 1 tbsp oil
- 1 tbsp butter
- 2 tbsp brown sugar
- 2 tbsp balsamic vinegar
- Salt & pepper
For the red onion jam
- 2 red onions finely sliced

Preheat the gas barbecue to 200°C and set up for two zone cooking.

In a pan over direct heat, add oil, butter, and onions. Cook until soft, then stir in sugar and vinegar. Simmer until sticky and jammy, about 15–20 minutes. Season to taste. Set aside to cool slightly whilst cooking the sausages.

Grill sausages over indirect heat, turning often, until browned and cooked through.

Sprinkle the hot dog buns with a teaspoon of water and place on top of the grill for 30 seconds - one minutes to soften.

Layer each bun with rocket, a sausage, spoonful of red onion jam, and a good crumble of blue cheese. Serve hot with chunky chips or grilled veg.
