Rare, medium or well done? To achieve the desired grilling results, you have to keep a close eye on the core temperature of the food that’s on the grill. We’ve compiled a few tips on how to easily check this. The optimum core temperature always depends on the food you’re grilling. When it comes to poultry – chicken and male turkeys, for example – the optimum core temperature is reached at 80–85 °C, while female turkeys are cooked or well done at 80–90 °C. With beef, you can enjoy a fillet of beef rare from 38–55 °C, while a 55–58 °C core temperature will cook it to medium. Fish, on the other hand, can be ready to eat from 50 °C.
