Vegetable skewers marinated in a spicy herb marinade


Herb marinade:

  • 40 ml olive oil
  • 2-3 tbsp balsamic vinegar
  • 1-2 garlic cloves
  • 1 bunch basil
  • 1-2 sprigs of rosemary
  • 3-4 sprigs of thyme
  • salt & pepper
  • optional 1 tsp chilli flakes

8 vegetable skewers:

  • 3 peppers
  • 1 red onion
  • 1 large courgette
  • 4 tomatoes
  • 100 g mushrooms

Preparation of herb marinade:Wash the herbs, shake dry and chop finely
Peel and crush the garlic cloves
Place the olive oil, balsamic vinegar, crushed garlic and finely chopped herbs in a bowl and mix together.
Preparation of vegetable skewers:Wash the vegetables and deseed/peel as needed.
Cut the different varieties into even, bite-sized pieces and skewer them alternately on wooden or metal skewers.
Brush the marinade over the vegetable skewers and leave to rest in the fridge for approx. 1 hour.
At the end of the marinating time, preheat the grill to 250 °C
Place the marinated vegetable skewers on the grill and grill for approx. 10-15 minutes, turning, until the vegetables are cooked and lightly browned. The vegetable skewers can also be grilled at high temperatures on the sear burner with the practical wind guard including holder for the GRILL+ skewers – but for a much shorter time than meat, for example.
