Parsnip Dreams
Grilled parsnips in chicory boats.
Ingredients
- 2 large parsnips
- 1 head of red chicory
- Hoisin sauce
For the Topping
- Half a lemon
- 1 tbsp. olive oil
- Freshly grated lemon peel
- 4 tbsp. capers
- 5 stems of marjoram
- Parsley to taste
- 1 of black pepper

Grate the parsnips over direct heat and brush them with the hoisin sauce just before they are ready.
Hot Tip
The parsnips should not be too hot; they should become crispy on the outside and soft and tender on the inside.

At the same time, clean the red chicory, remove the bitter stalk, remove the leaves and use as a boat.

For the topping, chop capers (and if you want anchovies), pluck parsley and marjoram, and season with the lemon dust and black pepper.

Finally, add some lemon juice and olive oil to the boats, place half a parsnip on top and arrange the topping over them.
