Piri Piri Tomahawk Steak
Juicy tomahawk steak combined with a hot and sour piri piri sauce
Ingredients
for the steak:
- 1 Tomahawk Steak
- salt
- pepper
- 2 tablespoons Sunflower oil
for the sauce:
- 0,5 Medium Red Pepper
- 3 Jalapeno Peppers (fresh, coarsely chopped, seeds removed)
- 6 Chili Pepper (fresh, coarsely chopped)
- 6 cloves Garlic
- 4 Large Basil Leaves
- 2 tablespoons Fresh Oregano
- ¼ cup Onions (chopped)
- 1 cup Olive Oil
- 1 tablespoon Smoked Paprika
- Lemon Juice (adjust)
- 1 ½ teaspoons salt (to taste)
- 1 teaspoon black pepper (freshly ground)
- ¼ cup dark vinegar (optional)
Directions

Allow the tomahawk steak to come to room temperature (leave it out for approx. 3 hours before grilling)

Preheat the grill to maximum temperature

Brush the steak with a little oil and season before grilling

Grill at high temperatures (over 250 °C) on all sides to create a nice crust and irresistible roasted flavours. Halfway through, you can turn the steak 90° to get a nice grill pattern.

Then simmer over a low heat (approx. 140 °C) until cooked to the desired doneness. Plan a duration of roughly 20-30 minutes for this. Of course, it always depends on the thickness of the piece of meat, as well as the desired core temperature. Use a grill thermometer to measure the correct core temperature. Target core temperature: 55 degrees

Remove the steak from the grill about 2 °C below the target temperature and leave it to rest for 5 minutes.

Then carve, before adding salt and freshly ground black pepper. Enjoy the flavour!

Preparation for the sauceCombine all the dry ingredients in a food processor or blender, and blend until the desired consistency is achieved. You can puree the whole thing until creamy or leave it a little chunky, it’s entirely up to you.

Now cook the piri piri sauce in a pan over a low heat for about 10 minutes and season with a little salt and pepper. To make the sauce taste spicy and slightly sour, you can give it an extra kick with a little lemon juice and vinegar.
